I'm only a couple of hours in to Final Fantasy VII Remake but I'm already so impressed by how much care and attention has been put in to the characterisation. The main characters are so well defined in terms of their personalities and the way they interact with each other.
Take Jessie for example: she wasn't much of a character in the original VII, but she now has a lot of interesting business going on and the dynamic between her and Cloud is so unique and different from his relationship with Barrett or Tifa or Biggs and Wedge.

Beautiful graphics, a top 3 OST, and god tier combat aside
I think they NAILED the characters in a way none of the FF7 spinoffs did. Remake really feels like the definitive version of the cast.

yup. there's some things from the previous games that pop up, but nothing too significant. the game explains those previous things as well, so i wouldn't worry about it if you're hung up on that.
highly recommend playing it man. i just finished it up, and if it weren't for P5R coming out this year, this would definitely be my GOTY. probably my favorite yakuza game.
