They luckily relegate her to a background character from year 2 on after the anime
when you see someone add some absolute garbage to their plan to watch list but you cant warn them because its a canon event

Theres one more serious arc then it runs into gag season for the rest of the series
that was kinda my issue with the first episode. I just didn't much care about any character. Yuki and Itsuomi just feel like shoujo fantasy characters. Maybe I'm getting too old but its just so trope-y with the typical big masculine protector with the small infantilized girl trying to see into each others worlds. I also just find that A Silent Voice handled the dynamic in a far more real way. I love romance anime but lately I have been feeling most of the new series are just so predictable now (dress up darling, angel next door, horimiya, tonikawa, sing yesterday for me, kaguya, etc.). I still enjoy some of those because theyre entertaining but I miss the days of shows like Golden Time, Maid Sama, Kimi Ni Todoke, your lie in april, etc. where there were real conflicts and it wasn't just a straight up predictable speed run of two characters ending up together.
Apart from Fruits Basket, my other fav romance anime I've seen this decade were probably Skip to Loafer and Fuukoi because those brought those vibes that I want to see in the genre

Finished Sound Euphonium Season 2
Kind of a slog to get through, with a much slower pace and kind of holdover from the events of Season 1. Some strong moments with the entire cast, and even though everything felt a tad more melodramatic I still enjoyed it. I won't call it a downgrade from Season 1, but it was more subtle and wandering. Don't like what they did with Reina, her arc last season was much more interesting

Man Princess Jellyfish is amazing. I've only read the manga though. The series and the mangaka other works Tokyo Tarareba Girls are what id immediately recommend if anyone looking for romcom that isn't another teenage/HS kids love story. These are about people in their 20s

Hmm I've only watched Kimi ni todoke out of those four you've mentioned, and tbh the whole drama of season 2 felt rather stupid to me.
But all four of them are 20+ episodes. I think most of the new romance series don't even have enough episodes yet to develop what you are looking for.
I wasn't a fan of the stupid Kimi ni Todoke drama in S2, they clearly wanted to be together the entire time and should've just jumped to that point and show them as a couple
