It’s because FMA 2003 was highly revered and because Brotherhood was able to stay true to the manga (as it came out much later) and was considered better than 2003 it became the “GOAT”.
FMA:B is great though and belongs in that discussion but I do agree that there are better series. (AoT isn’t one of them though lol)
For most people it's one of the first shows they watch so nostalgia is definitely part of it. It is a damn good series though. Easily better than Steins Gate and HxH, maybe not AoT.

I made it all the way to the end of the Marley arc a couple weeks after this post. The way this shows scale escalates so perfectly and the satisfying feeling when mysteries started being explained was so cool.
The true nature of the Titans and the walls were especially well done. The character dramas and relationships got more interesting as it went on too.
I can't wait for the manga to end next month so I can binge the end of the story. This series came a long way from it's beginnings.

Watch Vinland Saga. Same sort of quality as AoT.
Also check out Monster if you're looking for something outside of the usual shonen niche but still a masterpiece.

Watch it in Dub. Then don't watch episode 23 in the first season, but skip to SG0. Finish that and go to 23 and 24 to wrap everything up in a linear storyline.
Kinda like the way Eva fits the movie into the last two episodes of the series
