A recent anime I've been watching is To Your Eternity. It's not action packed but the concept is very interesting and the writing is great for an anime, the characters don't talk like aliens.

If you want a Shonen action series then you should watch Jujutsu Kaisen. The premise not innovative and the writing is ok but the animation is fantastic the characters are likeable and the pacing is fast.
