Recently, I thought it was Ottorino Respighi
Years ago, I thought it was Chopin
I even thought it was Chilly Gonzales at first
And yet, I still haven’t come across a classical pianist and thought, f***, this is my GUY
If those give you any idea of what classical piano my soul seeks, please guide me
Or just a list of very captivating classical pianists from the past

You ever heard Bach on the clavichord?
Friederich Griepenkerl, in his 1844 introduction to Volume 1 of the first complete edition of J. S. Bach's organ works, wrote: "Actually the six Sonatas and the Passacaglia were written for a clavichord with two manuals and pedal, an instrument that, in those days, every beginning organist possessed, which they used beforehand, to practice playing with hands and feet in order to make effective use of them at the organ. It would be a good thing to let such instruments be made again, because actually no one who wants to study to be an organist can really do without one."

if you're referring to specific classical interpreters and pianists then I recommend Argerich, Rubinstein, Horowitz, Arrau, Lugansky, Kissin and Ohlsson to name a few.
If you're referring to specific composers for classical piano music I'd recommend Ravel specifically any movements of his miroirs suite, his G major piano concerto and many of his miniatures such as the pavane, sonatine, l'ocean or even his A minor prelude.
You said Chopin wasn't for you so as an alternative for a romantic composer I'd suggest Rachmaninoff. His D minor tableux, b minor prelude, love's sorrow and G minor tableux to name a few

Ravel made my favorite classical piece of music
