I read somewhere that, at least shows and maybe movies, have this muted ass color palette because it's easier to compress the files for streaming. It makes sense but I don't know how much credence I would put into that.

Right, there's only so much space to house these files. The studios that own the services feel like they have to make cuts somewhere and it's not the runtimes or anything. So it's color palettes then VFX that seem to be first to be reduced.
