In terms of canon, things that can be explored: Dooku and Qui-Gon, Obi and Qui-Gon adventures pre-TPM, Anakin and Obi-Wan between TPM and AOTC, Anakin’s knighthood after Episode II, Republic Special Forces missions like the old Republic Commando books, etc.
I won’t spoil Kenobi but a certain old EU event is mentioned and I’m sure it doesn’t go exactly down like it did in Legends so ya can play with that too
