From my understanding, these strains aren't being developed in livestock as much as jumping from the far reaches of the world as we continue deforestation and development in more obscure regions.

This just isn’t true

Primary driver of deforestation is for animal agriculture btw.

Yeah fair play, definitely hyperbole from me saying that every one has been zoonotic but when you look at the ones that have been zoonotic in origin it paints a pretty clear picture of where the danger lies.
Chikungunya (birds, rodents)
coronaviruses (SARS bats, MERS camels, COVID-19 ?? bats ?? pangolins ??)
Ebola and other filoviruses (Marburg): (bats?)
Hendra, Nipah (bats)
Ross river virus (various mammals)
HIV (primates)
influenza (H1N1, avian) (birds/pigs)
monkeypox (monkeys, duh; also rodents)
West Nile virus (birds)
Zika (? "a wide range of animals in West Africa")
Six out of every ten infectious diseases in people are zoonotic
Primary driver of deforestation is for animal agriculture btw.
Isn't that as former agricultural centers are industrialized and their land displaced?

Forests are clear cut to make room for pastures for cows and other livestock to eat

Yes, because we've centralized agriculture to remote backwaters and exploited populations while industrializing. That land is also used for general farming. You know, non-meat products.
