Sometimes distribution companies will produce movies like The Irishman. But for other movies like "the big sick" it makes more sense for amazon to wait till sundance/cannes then buy the movie from the producers.

Good filmmakers have their own scripts/actors/collaborators so they are less likely to jump at the first mid script a studio shows them. In this case, the distributor, Walt Disney, owns 20% of Regency Prod company, the main producers of this movie.
