nah im exactly the same way, you'll get pretty good pretty quickly so dont stress
I get it. That’s how i was when i first started.. my advice.. start out with very simple/easy recipes and add to it as you get comfortable. You gotta build out your own internal process for cooking to feel comfortable in the kitchen and then those videos your watching will make more sense. Just my two cents.

lowkey if you're in the position to afford it and have it in your area, getting hello fresh can be a good way to start, super simple recipes and things are already portioned so you cant really mess up, plus you can keep all the recipe cards for the things you liked and remake them later

Yeah you hit it on the head. Like once I get my own process and the way I like to do things I'll be much more comfortable. Just gotta start doing it and get the experience.

And to add on to what Nocta said, don't be afraid to step outside a different brand or substitute an ingredient here or there. It's expensive af to buy the same exact stuff you see in every video. Find a tomato sauce brand you trust and stick with it. Find your go to bread. Find your brand of seasonings that you can afford, etc. It's like painting, all the youtube and tiktok painters got the expensive s*** because they got sponsors but at the end of the day red is red, bread is bread, you don't have to go broke buying the name brand stuff they use
I use the generic Walmart and Target stuff and I get compliments on my cooking. People are so used to fast food s*** that any home cooked meal is a huge upgrade for them. They're not going to know or give af if you used essentials or market pantry ingredients
