Anything is viable, but if you're new to the series, a high vigor - high strength build like vagabond would be easiest. Heard samurai is pretty good too

Ok I got an idea in regards to nepheli quest. Obviously dont give her the potion however after you give her the stormhawk she has a unique dialogue saying it reminded her of her first hawk. Now not suprisingly in the same place you find that stormhawk there is also a unique summon called stormhawk deenh which I am now thinking you gotta summon somewhere to progress? Question remains where tho

Thats its description. The old king of stormveil would maybe be Godfrey? I mean in the room where you fight the first boss you encounter. That spider arms guy there is a huge picture of him afterall (he is the guy with the lion on his back) . And not suprisingly where you fight the same guy is also where you find the ash and that key item. The Anticipation Chapel (the starting area)
