Does the 10 hours just countdown during playing? Guessing you see that timer?

You see the timer every time when you start up the game. It will only run down while you are playing

I have a question about early access too. Will I be able to unlock trophies during this? Or will they not unlock until I have the full game?

They will unlock

Make sure you close out of it when not playing though. That timer runs even if it's running in the background
