Watch the anime, it gives a good enough closure to the main plot points, although some characters arcs are left unresolved (id argue it works well with the story being told and its overall message however). Then you could wait for at least the next arc in the manga to end before diving back in, after all the writer himself considers this part a post game quest of sorts. Its too good not to watch at least

the author has had horrible back problems for years so he's currently managing 10 chapters every other year ideally.

there are only 60 chapters available rn after where the anime ends (340-400) because of the author's medical issues but he (and his assistants) have recently been knocking out pages. though they might be released by the volume instead of by the chapter
