That sound works better with her personality. She's a funny and off-kilter person and her collaborators have had comparatively esoteric influences, so the tracks that expand her musical range beyond the world of Disney pop pan out a lot better than the piano songs.
To pull off those ballads, it helps to have an amazing timbre and an endless well of pain that people can empathize with. Olivia, though she sings a lot about heartbreak, isn't an Adele vocally, and her production isn't as inventive or textured as Lorde's when she does a sad one. Olivia just comes across a lot better in upbeat rocker mode.
