I think that line is referring to his greatest ideas and writing coming out late night. He's said this again on Club Paradise and Furthest Thing and probably other songs.

it's a double entendre. latest nights as in most recent nights, latest nights as in nights where you stay out late. he was really climbing in fame around this time, so his latest nights were his greatest nights. and he likes to stay out late and party, so his latest nights were his greatest nights

i've spent a lot of nights staying out late partying with those guys (long story) and he def likes to do that. as to whether he specifically meant that in that line, i haven't asked but i'm pretty sure that was the meaning. "late" has two meanings
