He didnt take 20 mil from Def Jam he gave them an art project that legally counted as an album so he fulfilled their contract that he owed them one more album.

Apple gave him 20 mil for the exclusive rights to Blonde because their streaming service had just come out and wanted big name people on it.
So Frank gets higher royalties on Blonde and he used the money he got from Apple to buy his Channel orange and Endless masters back from Def Jam.

The reason why Endless isnt on streaming is because Def Jam would still get streaming revenue for it.
So in reality the only money Def jam made back was from him buying his masters back.
