Right, but this is like a sliding timeline relative to the story being told.
So, looking at that whole X-Men section after Endgame we start with Days of Future Past, which resets the X-Men timeline. Therefore we go back to Apocalypse, then Dark Phoenix, to Deadpool to New Mutants. More or less to catch up with the timeline. Logan is placed where it is for two reasons 1.) The events of the film are directly referenced at the start of Deadpool 2 and 2.) Logan plays into Deadpool & Wolverine which is set in 2024.
So even though the events of Logan take place after everything else, it plays into what is going on in the past.

Releasing a show about a character in that show, three years after it concluded, just seems like the opposite of striking when the iron is hot.
ik production takes time, but a gap like that just seems un-beneficial to viewership and interest.
