Why forfeit games though? Worst case scenario if a team has a covid outbreak just field some practice squad members or whoever is available and vaccinated.

That's a fair take but how about this. Give some lesser known vaccinated players on the COVID outbreak team a chance to play meaningful minutes. Sure they'll probably lose anyway but having a small chance is better than none imo, and you're rewarding those who vaccinated.
