Thinking about picking up a point n shoot 35mm for my gf who wants to get into film photography. Leaning towards Olympus Infinity Zoom but completely open to recs preferably <$200

You can only really get point and shoots for that price point.
Even an older entry level DSLR like the T2i/T7i Rebel should cost somewhere between $300 and $500. You're essentially paying for the CMOS sensor.
My suggestion would be to start with something like the T2i and get used to the controls of the camera. Then work your way up to something better. Eventually, you'll get better at camera control and you might even get clients so you'll back your initial investment.
Otherwise, you're better just shooting off on your phone since most cellphone cameras these days are really good.

I was thinking of looking at cheap mirrorless cameras (if they exist) since they're less bulky than DSLRs, but maybe I just go with the DSLR you suggested

No problem. Don't get a mirrorless lol. This might go against what other photographers here think but I think mirrorless is a scam really only to increase the manufacturers' profit margins. You might be able to get a camera body for a decent price but the cost of lenses for mirrorless will add up and quickly.
The only exception to this would be if you were interested in using a mirrorless like the Sony A7 for video, vlogging or starting a YouTube channel.
