I bought a 1TB ssd when they became compatible. Its now almost full. If I buy a 2TB one, is there a way for me to transfer all the stuff on the one have now to the new? Do I have to get an external one and use that to transfer between the two?

I think the external option is correct, but for that you could just use a regular 2TB Hard Drive

Souls games are focused the lore, world building and exploration while Nioh games are all about the fast paced high action combat. They're both top tier in those respective areas so it depends on what you value more.
though I will say that while Demon's Souls is still great you've already experienced the refined versions of that formula with the later games
