So I don’t follow soccer much but why were people in such an uproar about this? What was the problem?

Seems like they were just taking the best of the best and creating a new tournament

The uproar was with the biggest federations of the sport. It's like in the NBA if Steph, Lebron, Kevin Durant, James Harden & the best players in the league decided to create their own tournament. If the NBA wasn't getting cut a check then they for sure would be upset and that's how FIFA & UEFA felt about these top teams making their own league. It's a lot of politics involved but they were threatening to ban the players from tournaments like the World Cup if they played in the Super League, it's crazy!
