Because that’s how it’s spelled and most people in the north were politely racist (aka they used the word at home) whilst in the south... well they made songs like this.
Also pretty much the entire US had a southern drawl around the first World War till almost the 80s tbh. Watch New York City news casting from the 80s and even they had a little bit of southern flare to their accents.
