When does the anime get good? Im on like ep 65 and it’s been nothing but mid to me. Not unwatchable but i don’t care about none of the characters, I don’t find the plot intriguing, nothing, just random adventures and generic goals. Should i give up on it if I’m not hooked yet?

I think many fans would say that episode 92 is the start of one of the first great story arcs. But the Whisky Peak arc ( the one you're watching right now) is the point where the arcs start to become more connected, and a clear villain exists across multiple arcs.

Can i ask what age were you when you finished the Arlong Park arc? All i see so far is a story meant for kids (i know it’s a Shonen) and i can see how kids would like it, but what would an adult find appealing in it? My guess is that, since OP is so long, the adults that are currently watching/reading are the ones who grew up with it? It would make sense since the show has been aired for more than two decades.
For instance, i remember loving Naruto when i was 11 and being hooked from the very start, but then i tried to watch it again a few years ago (early 20s) and i found it pretty wack.

I'm 28 and I started One Piece at the beginning of March, not exactly sure when I finished Arlong because I'm 640 episodes deep now
I can see what you're saying but it's a very incremental build. The world building/slow burn storytelling is incredible to me. With time, more serious topics get touched on more frequently as well.
There are definitely some pacing issues so you might want to try the manga as I've heard repeatedly that reading One Piece is much better in that regard than watching it.

I think you should watch the first couple Totally Not Mark videos on the first set of arcs in One Piece. He was a first time reader in his 30’s and he breaks down pretty well what the strengths of it are and he’s certainly not suggesting that you’d need to be a child to warm up to it.
