So there are some external conditions that allow everyone to benefit because they allow us to do what we do in the manner that we currently have
For one, our staff is like 15 people maximum and half the staff has been here for 15 years. Ridiculous for one, and it helps because we all personally know each other. I tutor some of their kids, we visit them when they have kids, we attend weddings, etc.
Secondly, our patrons have a lot of regulars and have been here for years on end, if not the entirety of our 18 year history. People regularly help us in financial places (pandemic etc) and they provide a great presence themselves
Third, the town we are in has a median income of 200k, a growing population, 75% home ownership, and a shrinking median age. This means we are milking a lot of rich people and can charge well. We also still get random patrons every day
Given these conditions, we can do what we do. We guarantee living wage, first off. Servers make over 300 in tips on a healthy night over a dinner shift, 250 on lunches. Bussers are usually high schoolers who walk home with 60-80 a night in tips on a healthy night. Cooks are all salaried starting 95-105k. Me, my brother, and my dad fill gaps to prevent overworking
Second, since our staff is small and intimate, we can decide on things like profit use and restaurant direction. Everyone agreed that the three of us in my family do an extreme amount of work (we do nearly all the admin work and we’re the only bartenders) so we take home a good amount of profit and everyone gets bonuses. There’s a yearly allotment to a savings account for the restaurant pulled from the rest of the profit which we might actually use to invest into turning our wine retail store into a sports bar (the first in town) No one is discontent with the restaurant so we’re pretty good where we are. The entire business is more a passion project that became collective rather than a means of production
It’s really just the preferred outcome of a number of unique factors rather than this drive to establish an equitable business
