I’ve found a banh mi integrity depends on the freshness off the carrot.

If the carrot is to ripe then it’s a chore to chew and ruins the experience butif they have the carrot in brine then it’s too mushy and the texture is ruined.

There’s a balance that only a few places truly understand.
