I assume you can do it like the old games where you can re-do all the challenges and get stat points again once you switch characters or did they remove that?

I never did 100% this game because the Mario collection dropped. Definitely plan to go back and 100% the game. But I did “beat“ the game.

idk if you've done it but try going for the rookie/veteran/legend challenge collections. they aren't too hard but pretty entertaining, that's where i picked up after 100%'ing like you did

Took a long break because the Mario collection came out but now that I 100% 64 and Sunshine, I’ll probably pop this in more again.

How do you get the secret tap in SanFran?

Nyjah has perfect stats in everything but Lip Balance and he still doesn’t even come close to enough height or distance to reach the secret tape.

Edit: Figured out how to do it but now I either fall off before I get to the ramp or hit the ramp and always barely miss the tape and end slightly right of it. Sigh.
