It’s like a vertical skewer similar to a rotisserie with a broiler type attachment for the flame. Some get more elaborate but the idea is the same.
I think every Mexican grocery store sells this meat prepared and you could cook it in a pan but it doesn’t compare to when it comes straight off the trompo. I stopped eating pork some time ago but I can still taste the tacos when the smell hits me.
