They put the tongue in a big stew and it boils and cooks with other stuff, then when it’s done they take a tongue, strip the skin off of it which takes off all the tastebuds and stuff I think and they eat the meat on the inside

Cabeza is the superior taco meat when it comes to beef but not all places have good cabeza so it can be risky just ordering that s*** at any random taco spot
