    just got my vaccine n havent been feeling 2 well.....
    been making a lot of congee

    based on this recipe

    for 2 ppl
    ingredients:

    • little over half cup long grain white rice (basmati or jasmine) WAShed... i dont rly like the texture of short grain rice for this but its not bad its just not quite as good
    • 5.5 cups homemade chicken stock (just pressure cook leftover chicken whatever w some water--no veg no herbs)
    • whatever chicken meat you can get off the chicken u pressure cooked
    • .5 lb baby green bok choy (which isnt even technically bok choy), washed, trimmed of bad leaves/bottom stem bit, chopped into like quarter inch shreds *
    • 1.5 inches ginger chopped into 4 chunks
    • dash of white pepper (if you don't have white pepper, omit)
    • chicken bouillon or better than bouillon to taste

    recipe:

    • bring chicken stock, meat, ginger 2 boil on high
    • add rice a little at a time, stirring until back to a boil
    • turn heat to medium, cover partially-- set timer for 15 min
    • add bok choy, cook for 10-15 more minutes
    • stir vigorously so rice grains are all broken
    • add dash of white pepper, chicken bouillon/better than bouillon to taste

    serve with chinese pickled vegetables (eg mustard root), fermented bean curd, japanese stewed seasoned nori, pork floss, etc

    *if you dont use bok choy, increase stock to 6 cups

    this is what id always eat when i got sick as a kid :)
