I fw this more than chow mein but I’ve only had chow mein from cheap Chinese spots so might not even be a fair comparison

Homemade injera didn't turn out right so had to get some at the store which ended up being a bit too brittle which is why one plate has all those small pieces but still fantastic overall

Injera is a fermented flatbread that's the staple dish of a lot of Eritrea and Ethiopia (the grain used is called teff)

You eat it with your hands and tear pieces of it off to wrap around whatever is on top of it. It pairs well with a lot of different meat and vegetable mixes (first picture is collard greens - called gomen - with a beef mix - called tibs and the second picture is a lentil mix - misir wot - with a chickpea based food called shiro)
