Shanghai has the goat food but the best of the best is Shanghai russian borscht w oxtails ughhhhhhhhhh
Other classics:
Fan Tuan (Chinese donuts wrapped in pickled mustard green root bits and pork floss then encased in sticky rice, only good made to order)
Shanghai style wonton with shepherds purse in the filling
Shanghai spring roll (the ones w Napa cabbage filling)
Red braised lions head meat balls (called lions head bc they’re rly big meatballs… it’s just pork)
Shen Jian bao (aka shen jian man tou) basically xlb but the skin is thicker and it’s pan fried
Xue cai rou so rice cakes
Red braised mini crabs on top of rice cakes (might be a ningbo thing too??)
Kao fu
Shanghai smoked fish (xun yu) not actually smoked I don’t think it’s like fried and then steeped in sauce then served like room temp
