Been on an electronic/trip hop kick recently but I think they make for the best headphone music anyway:

Squarepusher - Port Rhombus EP (got into him super recently, I think it's most accurately a DnB project but I love the way he mixes acoustic elements. Instantly sets him apart from his contemporaries)

Burial - Antidawn (pretty recent release but be warned this this is extremely sparse even by Burial standards, really nice for long walks especially with winter coming up. If you want something more substantial then I highly recommend his Rival Dealer EP)

Massive Attack - Mezzazine (what can I even say about this, just some of the best sound design ever put on tape, incredible samples, guest vocalists, and drums. Saw someone say they're masters at actually making dynamic tracks and I can't agree more, every track takes you through some lulls and peaks but they take you through everything with such surgical precision, so so good)
