Replayed it earlier this year, because I never finished the DLC in my first playtrough. Yeah, the side quest really adds to the whole experience and world building to the game. The DLC are great as well, so I'm sure you'll have fun with it if you enjoy the core game.
Yeah, as soon as I read the title The Witcher 3 came to my mind. I have to replay it at some point.
The Fallout games always had great side quests.
The Silver Shroud from Fallout 4 jumps out to me. In FO2 there’s a small side quest where you can become a p*** star with the stage name Arnold Swollenmember lol

Hell yes, honestly all of the side quests in GOT are incredible
Witcher 3 Side Quests can be deeper and more interesting than most video game stories in general. That game has incredible writing
I nominate Anju and Kafei from The Legend of Zelda: Majora's Mask
Never played any of the Zelda series but out of all of them this is the one that interests me the most
Carnal Sins and The Cave of Dreams immediately come to mind
Plus all of the Witcher contracts were super interesting with some of them having great moral dilemmas
