I think there are always different reasons tbh
Big one is just hard to keep things interesting longer you do something so maybe you take it in directions that don't end up working
You have to remember it takes a lot for these series to get made and on air so usually something is a good idea but keeping it good is a lot harder
The Boys just ran out of budget. Euphoria lost Angus and Sam Levinson didn't really know what to do I think. TWD just got milked into the ground cause it made money.
GoT is the only one that is f***ing baffling. How HBO let those two dumbasses drop the ball like that is crazy.
they were frauds, carried by the source material and when that ran out, they didnt have the sauce
the best shows know how they end when they start

Euphoria season 2 also sucked and boys really only had 1 good season since they decided they needed to milk it
Hacks went 5 for 5
Flash is a prime example
Seasons 1 - 3 still peak CW capeshit to this day
Shows like the wire and sopranos that never really have a noticeable drop off are few and far between, guess you could throw breaking bad in there too
Another factor is bad decisions like the characters they decide to kill off that kills the whole vibe like killing clay off on some of anarchy for example, the co main at the end of first season of board walk empire etc etc
They were never meant to be many seasons so the writing turns to “So… how can we keep this going?” Instead of good storytelling.
Dexter is good example of this going wrong.
Baby Reindeer and Half Man are good examples of ending the show after 1 season and sticking to good storytelling instead of “how can we have another season?…”
Also this, shows like Nip Tuck, sons of anarchy, the boys all suffered from this where it’s obvious they re strictly making it last to make it last despite having no real story left to tell and by the time it wraps up so much dumb s*** happened to drag it out it doesn’t stick the landing the same way it would have had it came sooner
shows like Mr Robot and Mad Men only got better
