I definitely agree with you that the vast majority of Dem voters are moderate/moderate-left-leaning. That being said there's still a very solid block that are also strong left.

So it's one thing to make the party platform (that requires taking a single stance on each issue) moderate; however, only having Bernie and AOC be the only left-wing speakers at the convention (when there's a long list of speakers) is not nearly as representative in an area where they are able to be.

I would say that at least 20% of Dem voters are strong left and/or like AOC. That is not a small minority by any means
