This was an incredible watch. A lot of layers and nuance to it, possibly more than any other episode in the series.
People complaining about Jimmy giving up the deal feels a lot like the people who complained about Walt admitting he did it for himself or sparing Jesse in Felina. I think you're misunderstanding the character and projecting your mindset onto him. It didn't matter to Jimmy if it was 7 years vs. 9 years or 75 years vs. 150 years. It was to show that he can always con his way out of anything, but it always prevents him from facing his demons. He didn't just do it for Kim, he did it because he realized he could change. For so long he manipulated the law in his favor and he was finally ready to accept justice for what it saw him as.
It's also him still going out on his terms, which seems really in character for him. I'm surprised people are so mixed about this ending. The alternative of Saul conning his way out of it and getting back together with Kim seems even more Hollywood-like, and doesn't give the satisfying closure this does. The whole show was about a broken guy who scams his way out of situations and is worried he'll never truly change. How would him taking the deal make it feel like any of this was important?
i think it makes sense from the perspective that even if he took 7 years and then walked, what was he going to do? he had nothing left. it's not like he was going to get back into law. he couldn't really get back together with kim. everyone else he knew was basically dead. he had no actual options left, even if he got out of prison he'd basically be relegated to being gene takovic again (in spirit, not in name); the only thing he'd have would be the pull of getting back into "the game" again, something which the whole gene saga showed he was incapable of staying away from.
him being in prison makes sense, it was all he could do. i think that's why they showed him making bread in prison. it was a juxtaposition of him comfortably doing that vs how uneasy he felt making cinnabons as gene; even though gene was technically "more free". he didn't really care about freedom because freedom didn't grant him any actual benefit at this point. at least in prison everyone sees him as a friend, whereas if he was out of prison everyone would see him as an enemy

i agree it's unrealistic but so is like a ton of stuff that happens in the BB/BCS continuity. character studies are meant to convey themes or ideas more than they are supposed to be reflections of real behavior, even if their settings are grounded in reality. it's clearly making a point about redemption and retribution, not literally re-enacting how people would act if they were Saul irl
