fate stay night is the original story and like tranq said it's originally a visual novel with 3 diff routes for each of the main love interests

outside of zero (prequel to stay night) u have apocrypha, grand order, and strange fake which all take place in the same universe but parallel worlds (think of like different timelines or some s***)

apoc, extra, and grand order adaptations are plagued by terrible production so i wouldn't bother with those just read the source material if ur really interested

i do recommend carnival phantasm but that's a gag comedy with characters from the entire nasuverse so i think most of the jokes would go over ur head (go watch it anyway)

I know FGO is also a gacha game that helps fund FG like Melty Blood Figured there would be a connection there since they have Saber in the game. Would've been cool if they added more fate chars

Melty Blood is based on Tsukihime rather than Fate btw (basically a different timeline/parallel world? no idea), Saber is more like a special guest character but there are some connections between Tsukihime and Fate as well
