should I read the manga at the chapter where the last episode ends or start reading from chap 1 once I finish the anime?? would I miss anything?

Reread some sections of the Re:Zero LN. There is a lot of interactions they cut out from these first 2 episodes. They're advancing the story pretty quick.

I dunno since I only read the Manga...but I think you should be fine by just reading the Manga afterwards where it left off since the Anime only adapts half of the Manga I think

Read the manga, anime doesnt cover nearly half of the story and has an entirely different ending from the manga.
