    Assuming you stay in Chicago cause of the portillos comment. Go to the best butcher you can find or at least best grocery store butcher. Paulina's Market or Publican Meats seems to be the best in Chicago ask them for tips on how to cook your steak you buy yourself at home

    how u cook steak depends on the thickness

    if its thick, u sear it both sides then throw it in the oven at 350 for like 10 minutes

    if its thin u sear that s*** both sides then maybe put the heat lower till its cooked inside

    either way unless you want to destroy your pan youll want cast iron, cook at med-high temp and remember to use the oven if ur not sure if its cooked throughly

    seasoning is simple, butter, garlic, salt and pepper
