How far away and how long were you gone? Not sure exactly what the rules are for how long they stick around but there's probably some limit unless the thing you made just flew away or rolled down a hall without you noticing.

If you had a horse in BotW and you still got the save file on your Switch then your old horses are available for you already if you go to a stable.

So I built the raft used it for a while then noticed some ennemies chilling on the riverside, I made sure to put my raft on solid ground so that it wouldn't drift away, cleaned the enemies went for a little walk like 50m away found the korok and brought it back to my raft, which wasn't here anymore

I can think of various possible reasons for this but I would just be speculating. We'll have to experiment a bit to know the true limits...of the Ultrahand contraptions. I know there is some sort of limit that some NPC mentioned but I don't remember the details and if it applies to your case specifically.
