Once you go meet her at Embers, you can't do any of those sidequests unless you boot up an old save from before. So I'd do those first unless you're really dying to see the ending.

I still gotta finish Phantom Liberty but I think that I’m just scared to do that final mission because it’ll all be over (I could just replay but still)

it really is man. Once that post credit scene hits I was just soaking it all in.
