I'm not gonna lie to y'all, my mental health kinda f***ed me in the last year and threw everything thing of, especially my diet.
Honestly, I typically eat just once a day, maybe a snack here and there and I've been trying to get better at that, but one thing I've noticed is I've somehow cut veggies out and idk how to get back into them
Like, the only veggie I can think off top that I "like" which is corn and green beans, but Everytime I try having them canned it's trash. I'm not one of those folks with an immature palette, I just normally work in restaurants and able to get whatever I need from there, but being unemployed I regressed in that area.
Any suggestions? (please, get your jokes off btw ik their coming)
I came up on some tomatos, eggplant, onions, red cabbage, i jus sautee them with some seasoning, tastes amazing, just learn to cook its very easy
smoothies and fried meals. You can also just get the frozen packs of veggies and look at the preferred ones you like and throw them into your meals or find recipes
Frozen corn/green beans better than canned imo
Salads can be major meal prep, make a big bowl of a chopped salad base (cherry tomatoes/cucumber/onion/beans/some grain/dressing/etc), and add herbs/leafy greens/protein separately to each serving to avoid them getting slimy
Ig maybe theres some argument of how cooking veggies denatures the proteins/vitamins but i prefer cooked veggies
I throw frozen peas, frozen broccoli, frozen corn, or baby carrots with any meal. I think frozen veggies are easier to work with than canned because it’s easier to get your serving size and you don’t have to worry about storing the rest of the can. Also I’ve noticed that sometimes low sodium cans cost more than the regular so switching to frozen has been a major play.
hard to say w/o knowing what u normally cook
when i cook rice, i sometimes add a handful of frozen peas in th last ~9 min (no need to be precise), or somtimes i make takikomi gohan w shiitakes n carrots
when i make pasta, sometimes ill toss a handful of spinach in, i like the texture/flavor so i just do it as is, but you could blend it into the sauce and u wont taste the spinach at all
i often blanch bok choy to eat too w my meal
occasionally ill prep a bigger batch of a vg side dish like okra ohitashi or braised red cabbage n eat it w a few meals thru the week
lastly, i do a lot of lettuce and seaweed wraps, like ill cook some spicy pork and eat it w rice in a wrap w some cuke or carrot strips
I snack on cucumbers and tomatoes ngl they taste great, accompany any meal and don’t require any sort of dressing

It goes both ways, there’s a lot of nutrients that get more available after cooking
There’s a bunch of variations of high fibre rices that people make that are pretty popular rn, they just mix in lentils, beans, etc
Always keep frozen peas, edamame on hand. Whenever you warm up a grain, throw some frozen things in with it in the microwave

i know this isnt veggies but overnight oats is such a life hack tbh
lazy-life friendly.
tons of fiber (healthy poops) and good carbs to curb hunger for extended periods cause ur blood sugar is regulated. 1:1 ratio of oats and any milk you like, throw it in the fridge overnight
i love having a few spoons before my morning adhd meds
you can add honey on top or some cinnamon powder too or fruits

Hmm, I eat a decent amount of carne asada tacos (which I've made salsa for it which helps a lil?)
Honestly, it depends on the month but normally shrimp/fish, chicken (wings have been cheap, I make rice a roni or potatoes to go with), street tacos, and I try to make a pot of something at least once a month (like red beans/rice, Etoufee, stuff like that)
Kinda versatile/I can actually cook is the crazy part
