GoT was set in 1274, they could jump forward 7 years later with Jin and tell the tale of the second mongol invasion in 1281

No I think they are on top of it. Been 4 years since the 1st one. They clearly wanted to announce this one closer to it being finished, unlike the last one which was announced a full 3 years ahead. It's possible of course to be delayed, but I think they got their formula down from the first game and just been building on it these last 4 years.
