like every job, it’s a mixture of both. i had someone train me but there were also moments where people came in and ordered something that i didn’t know how to make. so they just coached me through it
once you get the lingo down, it’s easier. like, a vodka redbull is literally just a vodka with redbull lol. “on the rocks” just means with ice
i have no idea what that other s*** you mentioned in the OP is though. but to be fair, i just work at a hotel bar so it’s not that much variety where i’m at
could very easily do it without them knowing. I used to put a stringbag on my chest under my shirt and just pretend to eat pizza at cicis and lowkey slide it into the bag under my shirt collar, walk out with like 25 slices and never once got caught it would pretty much be the same thing

order a vodka soda with a lime that's my go to. when you go to order ask to open a tab and give them your card. every time you go for a drink say your name and say "add it to my tab"
at the end of the night ask them to close the tab and they'll charge you and give your card back

If you're opening a tab, you'll give them your card when you order or receive your first drink. When you want to close it, just say so. Be sure to or you may be charged for their holding it, not to mention you'll need to pick it up the next day
