it's just a very temporary thing that happens during mints usually only a few times a week

first come first serve once a smart contract with nfts is up and open for minting

the gas price is based on people bidding for getting their transaction included in the next few blocks so when people all rush in at once it becomes a feedback loop driving up the gas temporarily
