The way I see it, Carm and Sydney share a deep passion for food in general. That's why they need each other and they know it. I don't see her actions as stubbornness but more like passion-driven. They both have ego issues but they wouldn't be great without it.
Right but isn't Carmy a world renowned chef as supposed to Sydney being unproven? At that level passion is a necessity but so it swallowing your ego (as shown by Garett and everyone at the Michellin restaurant).
Sydney literally b****es at everything that doesn't go her way and she's yet to really prove much, if anything.

I would always see the commercials as a kid and would hear some about it growing up in Texas but never picked it up cause I thought it was standard NBC show but I was sleep
