Why would you use expensive headphones ?

It's about getting a neautral frequency curve, can't have the signal colored by too much bass or treble or other enhancements.
Usually when mixing you also have a pair of trash speakers to see how the mix translates to different devices

There’s expensive neutral headphones though, and ones that are generally reviewed to be much better than the M50x(the ones he’s using)

Also I think those are just meant for monitoring while recording, not mixing or anything like that. The studio probably has 100s of them.
