i eat hella peanut butter on top of 6-8 meals a day to gain about 1 lb a week. I life 5x a week
Add extra olive/sesame oil to anything you're cooking if you're using it. Use full fat version of dairy if you do that (milk, yogurt, cheese, etc.). Also you can add peanut butter to like anything.
Dried fruits and nuts has a lot of calories and can be a great snack
poptarts are pretty calorie dense
and delicious
The fattest food you can get your hands on is heavy cream.

Don't worry about weighing yourself everyday to see if the weight sticks, it take a awhile for your body to adjust but just eat more than you use and you'll gain weight.
If you want to eat really clean and gain lean weight you'll have to end up eating mostly clean foods which sucks. If you okay with gaining some fat for a while you can dirty bulk but don't go too wild with the heavy s***. Make sure to get a good amount of protein as well and get good amounts of sleep

Just consistent 8 hours if you can, it's a lot easier when you wake up early and go to bed early, it's all just consistently though. If you work nights and sleep in the afternoon it's still good as long as the hours consistent.
If you can afford it, but a weight gainer powder and have a shake once a day. Nothing easier to put down than liquid calories.

Because it's not ideal to be skinny? Why do people always think that skinny people have it good and don't have to worry about a thing? A few extra pounds won't hurt
