Yo anyone have a good recommendation for a website/cookbook for good recipes that you can cook on a Sunday and then microwave throughout the week, and don’t take too long to prep/cook?
My wife and I don’t have time to cook fresh meals during the work week so we usually meal prep on the weekend but it’s always so time consuming finding dope recipes (and fish/steak don’t microwave well in my experience). So we usually just end up making some variation of chicken in the instant pot or pasta.
Would love to more stuff in the arsenal of ideas

I'm switching to a mostly Mediterranean style diet, minimal sodium and I'm going to meal prep. angel hair pasta
i made a sauce by frying some super thin garlic slices in a good coverage of evoo, removing the garlic, then dumping 2 containers of cherry tomatoes into the oil on high heat so they get all caramelized and blistered, once the tomatoes all got jammy and released their liquids i blitzed it, added some salt, parmesan, nutritional yeast, and 1.5 ladles of pasta water
then i dumped the pasta in mixed it, and added some mozzarella i tore into tiny bits, topped with the garlic

Come with an EMPTY stomach and make sure you try the coconut curry clams, those were the best thing in my opinion.

The recipe is really simple.
Salad: Cucumber, Red onion, Tomato i used grape tomatoes, parsley, Feta (make sure it has the orange seal it makes all the difference), chikpeas. I made a lot of this and threw it in the fridge. It's been holding up pretty well.
Dressing: Quality extra virgin olive oil, lemon juice, garlic, honey mix until it's smooth.
Salmon: Salt, Pepper oven for 12 minutes at 350. It's very good don't let the lack of other seasonings fool you.
Next prep expect something with lentils 😤
