The recipe is really simple.
Salad: Cucumber, Red onion, Tomato i used grape tomatoes, parsley, Feta (make sure it has the orange seal it makes all the difference), chikpeas. I made a lot of this and threw it in the fridge. It's been holding up pretty well.
Dressing: Quality extra virgin olive oil, lemon juice, garlic, honey mix until it's smooth.
Salmon: Salt, Pepper oven for 12 minutes at 350. It's very good don't let the lack of other seasonings fool you.
Next prep expect something with lentils ๐ค
lentils are hella versatile, i love cooking w them

Yo anyone have a good recommendation for a website/cookbook for good recipes that you can cook on a Sunday and then microwave throughout the week, and donโt take too long to prep/cook?
My wife and I donโt have time to cook fresh meals during the work week so we usually meal prep on the weekend but itโs always so time consuming finding dope recipes (and fish/steak donโt microwave well in my experience). So we usually just end up making some variation of chicken in the instant pot or pasta.
Would love to more stuff in the arsenal of ideas
I think a lot of japanese bento boxes are easily meal preppable and that would be my first go to
The issue is that it may be challenging to get a few of the ingredients
But once u have the 4 core japanese seasonings u can make 99% of it and be really set
Soy sauce
Sake
Dashi powder (easier than making dashi)
Miso
Maybe mirin
Most tecipes need mirin but u can just use more sake and add a bit of sugar and theres no diff
